The measurement that matters: 848°F stone, 935°F air

Every gas pizza oven is sold on a single number, and for the Koda 2 that number is 950°F. It is not a false claim — TechGearLab’s instrumented test recorded an average oven-air temperature of 935°F and a peak of 1102°F, so the chamber genuinely gets there and then some.

The problem is that a pizza does not sit in the air. It sits on the stone, and the same test measured the average stone temperature at 848°F. That is roughly 90 to 100°F below the headline figure, and it is the mechanism behind the most consistent criticism this oven attracts. TechGearLab’s reviewer put it plainly: the heat radiating from the tapered flame “aggressively cooks the top of the pizza, while the stone below doesn’t maintain enough heat,” producing “overly blackened tops and disappointingly doughy bottoms.”

Two honest caveats, because this is a single data point carrying a lot of weight:

  1. The one instrumented review is also the critical one. Downtown Mag called the Koda 2 the most user-friendly and consistent oven on its test, and Pala Pizza rated it 4.8 out of 5 — but neither published a stone-versus-air split, so they are not contradicting the measurement, they simply didn’t take it.
  2. A gap between air and stone is normal in every gas pizza oven. What is unusual here is that the oven gives you no way to see it, which brings us to the thermometer.

The practical fix: give the stone longer than you think it needs, and check it. At 20 minutes Pala Pizza measured the stone above 800°F; at 30 minutes it reached about 900°F. Ten extra minutes of propane is cheaper than a doughy base.

The G2 burner, and what Ooni’s footnote actually says

The Koda 2’s headline upgrade is G2 Gas Technology, which Ooni describes as a patent-pending tapered-flame burner running on dual lateral burners — lower in the centre, higher at the sides — instead of the Koda 12’s single rear flame. Ooni’s claims for it are specific:

Read the footnote on Ooni’s own page: “Based on measured results with Koda 12 compared to Koda 2.” Every one of those percentages is relative to the oven Ooni is replacing, not an absolute performance claim. A 420% improvement in stone evenness over a single-rear-burner oven from 2018 is a real engineering result and still leaves you with an 848°F stone under a 935°F chamber. Both things are true.

The unglamorous upgrades are arguably the better argument for the Koda 2 over a clearance Koda 12: owners on r/ooni report the control dial moved to the side, which fixes the Koda 12’s well-known melting-dial problem, an electric sparker in place of the piezo igniter, and a much lower minimum flame — useful if you ever want to cook anything other than a 60-second Neapolitan.

The thermometer problem

The Koda 2 has no built-in thermometer, and the control dial has no temperature markings at all. Ooni’s answer is the Ooni Connect Digital Temperature Hub, sold separately. TechGearLab gave the oven a Control subscore of 5.0 out of 10 for exactly this and called an infrared thermometer “essentially a required accessory.”

This is worth pricing honestly. A Gozney Roccbox at $399.99 has a dial thermometer built into the front. The Koda 2 Max has a full digital display with probes. On the base Koda 2 you are adding roughly $25-40 of infrared thermometer to a $499 oven, and unlike a cover or a peel, it is not optional — without it you are guessing at the one temperature the previous section showed you cannot infer from the flame.

Preheat: plan for 20-30 minutes, not 15

You will see “950°F in 15 minutes” attached to the Koda 2 across retailer and affiliate listings. Ooni does not publish a preheat time for the base Koda 2 at all — the 15-minute figure is the Koda 12’s, and 20 minutes is the Koda 16’s. Three independent reviewers, using three different methods, all landed longer:

The Technology Man’s figure is the useful outlier: 25 minutes to 400°C at near-freezing ambient tells you the oven still works in winter, it just wants more time. If you cook in cold weather, add ten minutes and check the stone rather than the clock.

For reference points elsewhere on the scale: the AVPN associates true Neapolitan pizza with a bake at roughly 905°F in 60-90 seconds, and a standard home kitchen oven tops out near 550°F per the U.S. Department of Energy. An 848°F stone is comfortably outside home-oven territory and just short of the Neapolitan reference — which in practice means a very good 90-second pie rather than a 60-second one.

1. Stone wobble — three independent sources. Downtown Mag reported the stone “doesn’t sit perfectly flush… wobbles slightly.” One owner described rear screws grinding into the stone on removal and was told by Ooni the wobble was normal, then returned the oven; a third had a crooked stone replaced under warranty. Check yours on arrival, while a return is still easy.

2. Wind sensitivity — multi-source, including Ooni. Owners report the flame dying or the oven failing to reach temperature in a crosswind, and Ooni’s own help centre concedes that a crosswind can prevent the oven reaching its desired temperature. One Scottish owner returned the oven over it.

3. Uneven left/right flame — a real cluster, not universal. Three owners in a single r/ooni thread reported one side lagging badly, with one measuring no more than 380°C on the right side at full gas. Ooni HQ responded with a replacement path rather than calling it in spec, which suggests a unit-level defect rather than a design limit.

4. Ignition needs patience. The instructions call for a 5-second knob hold; owners routinely need longer or several attempts. Ooni support’s fix is wiping the thermocouple in the right rear corner.

5. 14 inches is aspirational. TechGearLab found it “easier to bake a 12-inch.” That matches most 14-inch ovens — the stone is 14 inches, the comfortable launch is 12.

6. Carbon steel, not stainless. The body will develop surface rust if you store it uncovered. A pizza oven cover is a $30 answer to a $499 problem.

One thing that is not on this list: safety recalls. A direct query of the CPSC product database returns zero recalls for Ooni, by either recall title or product name.

Two comparisons deserve more than a table row.

The Roccbox is the sharpest threat. It is the only oven in this set currently discounted, it has the thermometer the Koda 2 lacks, and it takes an optional wood burner. Its “14-inch” marketing is generous — the stone is 12.4” × 13.4” and 12 inches is the real maximum — so you are trading pizza diameter for a gauge, a wood option and $99. The clearance Koda 16 is the awkward one. Ooni is running out its entire first generation — Koda 12 at $299, Koda 16 down from $649 to $499, Karu 12 at $249 — which means the discontinued 16-inch oven costs exactly the same as the new 14-inch one. If deck area is what you want and you can live with a single rear burner, an unsupported product line and no G2 stone, the Koda 16 is more oven for the money today. Buy it if you want the lightest genuinely high-heat gas oven with no electronics to fail, you cook mostly 12-inch pies for two to four people, and you accept that an infrared thermometer is part of the purchase rather than an upgrade.

Don’t buy it if you need a natural gas hookup — Ooni’s conversion kit fits the Koda 16 only, and there is no first-party path for this model. Don’t buy it if your cooking spot is exposed to wind, if you want a built-in gauge at this price (the Roccbox has one for $99 less), or if you regularly feed more than four people, where the Koda 2 Pro or Koda 2 Max earn their extra deck.

The bottom line

The Ooni Koda 2 is a better oven than the Koda 12 it replaces in every way that owners actually complained about — the dial no longer melts, the sparker is electric, the stone is 50% thicker and the flame is genuinely more even. But buy it with the real number in your head, not the marketing one. The chamber hits 935°F; the stone averages 848°F; Ooni gives you no way to see either. Preheat for 25 to 30 minutes instead of 15, spend $30 on an infrared thermometer, and the burnt-top-doughy-bottom problem that dominates the critical reviews largely goes away.
